I'm not 100% sure which spot to put this, but since it came up when I was looking at the Morlock I'll put it here.
For a Criptid (or any) entry, is the DEF bonus in addition or instead of the normal defensive roll that would be made?
Say a Knight-Errant was taking a swing at a Morlock and got like a 13 to hit, the Morlock would roll his DFT+Athletics to dodge which is +6. His DEF is listed as +6. Does that mean he's actually rolling a Flux Die + 12? If he chooses to use Fisticuffs to dodge does that mean he's rolling a 3+10+6 = Flux Die +19? Seems kinda high as characters seem to be rocking a +8 to hit usually.
I guess I'm just asking if DEF is a pre-calculated amount to roll for a monsters defence roll and not worry about his skills, just a pre-calculation for DFT+Athletics or something added onto any defensive roll beyond the DFT+Skill?

As I understand it, just a +6
I can't recall where I read it, but the as I understand it, the initial line is basically a combat summary to make thing easier on you and the player. To defend against an attack you add DFT + athletics + Flux Die. So the first line just has the DEF pre-calculated for your convince so you don't have to go the second and third lines and find the stats.
IE: Init is your Wit + instinct + flux die. Morlock's first line is INIT +7. Then below that it has them separated out as Wit: 3 and Instinct: 4. The sample Archtypes should be laid out similarly in chapter 2
The character sheets are laid out similarly. In boxes 3 and 4 you there are spots for you write in your total + to hit due to stats/skills so that all you need to do is quickly add that number to your flux die.

I suppose just knowing that it's always the DFT+Athletics, since you can use other skills that the creature may be better at to defend as well...

That's correct. Here's text from the latest page 29:
SAMPLE STATISTICS BLOCK. Each sample archetype includes a statistics block. The first paragraph summarizes basic combat abilities for quick reference, while the following paragraphs list abilities, assets, augments, traits, and sample names. Corporia’s ‘stat block’ is much like those of other role-playing games, but with its own formatting. Don’t worry; after a few times, using it will become second nature!
Here’s a look at the combat summary with each item written out:
Initiative +[WIT + Instinct]; Attack +[STR + Fisticuffs] unarmed [damage from STR], +[STR + Getting Medieval] melee [melee weapon damage], +[DFT + Firearms] ranged, [ranged weapon damage]; Defense +[DFT + Athletics - any armor/shield modifiers]; Damage Reduction vs melee/vs high velocity (ranged)/vs energy (armor description); Maximum Wound Level [MTL x 2]
And here it is again, abbreviated and filled in with numbers:
